six St. Patrick's Day parade photos

LVQ was in the St. Patrick's Day parade in Montreal, March 22nd.
It was a beautiful day, with more than 500,000 spectators.

Mary's Carrot Cake

  1. carrot top imageMix together, add to #1:
    2 cups flour
    2 teaspoons baking powder
    ½ teaspoon baking soda
    1 teaspoon salt
    1½ teaspoons cinnamon
    ½ teaspoon nutmeg

Bake 350° F in 10'' tube pan 50-55 minutes or until toothpick comes out clean. When cool, frost with cream cheese frosting.

  1. Mix together:
    4 eggs
    1 cup white sugar
    1 cup brown sugar
    1 cup oil
  1. Add to #2:
    2 cups carrots
    1 cup drained crushed pineapple
    ½ cup flaked coconut

Cream Cheese frosting

  1. Mix together:
    1 (8 oz.) package cream cheese
    4 tablespoons milk
    2 teaspoons vanilla

  2. Add and beat until smooth:
    4 ½ cups icing sugar
